Heat is only half the picture. Annual crops such as lettuce, spinach and rocket do bolt from warmth, drought and lengthening days, but biennial crops including onions, leeks, beetroot and celery bolt from the opposite trigger: a spell of cold, especially while young, which tricks the plant into behaving as though it has already lived through a winter and should flower now. A gardener who only ever checks for heat stress will miss the actual cause on half the crops this affects.
Our read RHS's dedicated bolting guide splits the mechanism in two: annual long-day plants bolt as days lengthen and warm, while biennials bolt after a prolonged cold spell, often during the propagation stage before planting out. A University of Missouri IPM article on onion bolting is more specific still, giving a working threshold of below 10°C sustained for three to four weeks as enough to trigger seedstalk formation, and reports more bolting in a season with irregular cool spring weather.
What to do: Diagnose by crop type rather than by weather alone. For lettuce, spinach and other quick-cropping annuals, treat heat and dry soil as the risk. For onions, leeks, beetroot and celery, treat a cold snap, especially soon after transplanting, as the risk, and delay planting these out until temperatures have settled.
In Scotland: Scotland's cooler summers genuinely reduce heat-triggered bolting in lettuce and spinach, but a changeable Scottish spring is exactly the cold-snap conditions that push onions and beetroot to bolt, so the same cool climate helps one half of this list and works against the other.

Bolt-resistant varieties delay bolting under stress; they do not remove the trigger. A named cultivar bred for resistance still bolts if the underlying stress, whether heat, drought or cold, is severe or prolonged enough, it just tolerates more of that stress before doing so. Sown at the wrong time of year, a bolt-resistant variety can still run to seed.
Our read Colorado State University's trial of lettuce varieties describes even its best performer, the Batavian type, as not bolting across a full season of testing rather than as immune, and its own conclusion frames bolt-resistant lettuce as extending the harvest window under heat, not eliminating bolting outright. RHS uses the word resistant, not immune or bolt-proof, for its own recommended cultivars such as Boltardy beetroot.
What to do: Use bolt-resistant varieties as one part of a bolting plan, worth choosing for a longer harvest window, but still time sowing and transplanting to avoid the crop's actual trigger rather than treating a resistant variety as a substitute for good timing.

Once a plant has switched into flowering, that switch is permanent for the current plant. Removing the flower stalk can occasionally buy a little more time to harvest the leaves before they turn bitter, but it does not return the plant to vegetative growth, and a root crop that has bolted will not resume swelling its root regardless of what is cut off.

What to do: Once flower stalks appear, harvest what is still usable straight away and replant rather than waiting or cutting the stalk back in hope of recovery. Prevention through timing, watering or cold protection is the only point at which intervention still works.

Bolting is a quality problem, not a safety one. Both sources consulted describe bolted crops as bitter, tough or unswollen, which genuinely does make them worse eating, but neither raises any food safety concern about eating them. Leaves in particular are usually still edible, just harsher in flavour, and are better suited to cooking than raw use once bitterness sets in.
Our read RHS's bolting guide calls bolted crops unusable in the sense of poor quality (bitter salad leaves, roots that fail to swell), not unsafe. Purdue's extension note likewise attributes the problem to bitter flavour brought on by bolting and the heat that often accompanies it, with no food safety caveat attached.
What to do: Taste before discarding. Harvest bolted leaves promptly, since bitterness increases the longer the plant stands, and use them cooked rather than raw if the raw flavour is too sharp. Only root crops that have gone properly woody are worth composting rather than eating.

What to do: For cold-sensitive biennials, wait until the soil has properly warmed rather than rushing to sow at the first mild day; if you must sow early, use cloches or fleece to keep young plants out of a hard cold snap.

Watering genuinely helps, but only against one of the two bolting triggers. For crops that bolt from cold, including onions, leeks, beetroot and celery, watering does nothing to address the actual cause, which is a temperature signal received by the plant, not a moisture one.
