“Bitter pit means the soil is short of calcium, so digging in lime or calcium feed will fix it.”

Bitter pit is rarely caused by a shortage of calcium in the soil, and it can turn up even in trees growing on chalky, calcium-rich ground. The real problem is calcium not being carried up into the fruit in time: uneven watering, over-vigorous growth and high nitrogen all interfere with that internal movement, independently of how much calcium the soil actually holds.

Our read Because the trigger sits inside the tree rather than in the ground, testing or amending soil calcium is unlikely to be the fix a gardener is hoping for.

What to do: Focus on keeping soil moisture even through summer and avoiding heavy nitrogen feeding, rather than adding lime or calcium to the soil on spec.

Bitter pit is a cosmetic and textural problem, not a food safety one, and affected apples remain safe to eat. Where the brown flecking sits only near the skin it can simply be peeled away, and more heavily affected fruit can be cooked shortly after picking, since the added sugar covers up any bitterness in the flesh.

What to do: Peel lightly affected apples and use them as normal, and cook up more badly pitted fruit into sauce, chutney or a crumble filling instead of composting it.

Applied roughly monthly from mid-June to mid-September, they are described as greatly reducing damage when repeated often enough, yet other guidance stresses that only a small fraction of sprayed calcium actually reaches the fruit, so sprays mitigate the problem rather than prevent it outright.

Young, vigorously growing trees are consistently named as more susceptible, and the same applies to older trees pruned hard during the dormant season, because both situations push a lot of growth into shoots and leaves at the fruit's expense. Heavy nitrogen feeding while fruit is on the tree adds to the same effect by fuelling more vegetative growth than the tree needs.

What to do: On young or recently hard-pruned trees, go easier on nitrogen feeding and keep an eye out for bitter pit specifically in the first few cropping years, easing off as the tree settles into a steadier growth rate.

In Scotland: Several of the apple varieties most often flagged as bitter-pit-prone, including Bramley's Seedling and Cox's Orange Pippin, are traditional culinary and eating apples that remain common choices in Scottish gardens for their hardiness, so the susceptibility is as much about which varieties get planted here as anything specific to Scottish growing conditions.

Cooling fruit slowly or storing it at the wrong temperature is named as a factor that makes symptoms worse.

What to do: Do not assume a harvest is bitter-pit-free just because the fruit looks clean off the tree; check stored apples again after a month or so, and cool susceptible varieties promptly rather than leaving them at room temperature before storing.
