A strawberry flower opens white and healthy, and by the next morning its centre has turned black. That flower will never become a strawberry. It isn't a disease and there's nothing to spray: it's frost, and for a Scottish strawberry bed it's one of the biggest reasons flowering doesn't turn into fruit.

What it looks like

The central, reproductive part of an open flower turns black while the petals around it stay white, an unmistakable contrast once you know to look for it. Only some of the flowers on a plant may be affected while others, often ones that hadn't fully opened yet, escape entirely. A flower showing the black centre will not develop fruit at all. A flower caught only partly, one that wasn't fully open when the frost hit, can instead go on to produce a distorted but viable fruit rather than none. Damage is usually visible within about a day of the frost.

The cause: frost meeting an open flower

The trigger is a single, simple overlap: frost, hitting a flower that has already opened. Strawberry flowers routinely open before the last frost of the season has passed, so how much a given plant loses in any one year comes down to which flowers happened to be open, or close to it, on the specific night a frost arrived.

Susceptibility genuinely changes with the flower's stage. A fully open flower is damaged by a lighter frost than a still-closed bud needs, and an earlier, still-tightly-closed bud is hardier again than either. It isn't contagious and isn't a soil or site condition the way a disease might be: it's frost injury to tissue, nothing more. Provided no further frost follows, later blossoms on the same plant open and set fruit normally.

A longer stretch of the calendar with open flowers exposed to frost also means a wider spread of flower stages is out at once. A heavier grade of fleece gives roughly 2°C of frost protection. Support the fleece clear of the blooms, on hoops or canes, rather than draping it straight onto them: flowers touching the cover are still at higher risk, since cold conducts through the contact point. Lifting the cover by day matters as much as putting it on at night: left in place, it blocks the pollinating insects the flowers still need.
